"Yanagi ba" is Japanese for "willow leaf blade," referring to the long, elegant shape. This type of knife is specifically for the cutting of fish, as for sushi. In the world of sushi, the appearance is extremely important, and this shape of blade is designed to make long, singular cuts through the soft fish so that the resulting pieces are clean and even in shape. As with most Japanese knives, the yanagi ba is handed, either left or right. This is a right handed knife, which means that the back side of the blade (not shown) is ground slightly convex to aid in the sharpening process and allow for plumb cuts.
