Samurai Santoku

Blade: 7" 1500 layer variegated high carbon "Ladder" damascus steel
Handle: 5" Australian ringed gidgee with micarta bolster

This 7" santoku was commissioned by a chef who loves hawks. The variegated ladder pattern and the shapes of both the blade and the handle are meant to emulate those raptors. This piece earns the "samurai" moniker because of its construction. The tang is tapered in both width and thickness and fits snugly into the handle. At the same time, a tapered pin passes transversely through handle and tang, holding the whole thing tightly in place. Pop the pin out, and the blade can be removed easily for cleaning. This is how Japanese swords were constructed for the famed samurai warriors.
