The cai dao or Chinese cleaver is the all-purpose cooking knife of one of the largest populations in the world. Don't let the word "cleaver" fool you; the blade on this knife is thin and light, as compared with the chunkier Western style cleaver. This is an extremely tall knife, with a blade over 3" from edge to spine. With practice, this makes it ideal for all sorts of tasks. Some cai dao feature a totally straight edge. Mine feature a slight rise toward the point to enable a rocking cut, not something you can typically do with one of these.

Pricing on custom work ranges from $100 on up to $10,000 and more, depending primarily on the complexity of the piece.

Lead time (i.e. when the knife might be complete) depends on what I have on my books at the moment, but in most cases 6 months is a safe guess.
